Slow-Roasted Prime Rib

Cooking prime rib low and slow locks in all the juices for the best flavor and tenderness. You'll notice there's hardly any juice that drips from the roast when you perfectly cook it in the oven - that means all that juicy goodness stays in the beef!

This results in a prime rib roast that is more tender and juicy than any other method. After it's done roasting, I sear it for a beautiful, crisp brown crust.

Bone-in Prime Rib Recipe Ingredients

  • Bone-In Prime Rib Roast
  • Kosher salt or sea salt
  • Olive oil
  • Ground black pepper

Slow Roasting Prime Rib

  1. Salt your roast all over the day before you plan on cooking it and refrigerate it overnight, uncovered.
  2. When ready to roast, preheat your oven to 200°F and add your prime rib roast to the rack of a roasting pan. Season with pepper and olive oil.
  3. Place the roasting pan in the oven until the center of the roast reads 120°F for medium rare, about 4 hours depending on the size of your roast. Use a meat thermometer.
  4. When ready, remove the roast from the oven and tent it with foil. Rest for 20 minutes and turn up the oven temperature to 500°F.
  5. Remove the foil and place the roast back in the oven for 10 to 15 minutes, until browned and crisp. Remove to a cutting board and let it rest 15 minutes before slicing and serving. Enjoy!

  • Salt your roast and keep it uncovered on the sheet pan with a rack in the refrigerator the night before roasting. Bring it to room temperature before adding it to the oven by allowing it to rest for 2 hours outside of the fridge, for best results.

  • Always cut your roast against the grain.

  • 1 Tablespoon Kosher salt or sea salt
  • 3 Tablespoons olive oil
  • 2 teaspoons freshly ground black pepper

Instructions

  • Salt your prime rib roast all over with kosher or sea salt the day before you plan on cooking it. Refrigerate overnight, uncovered.
