Hamburger and rice casserole with cream of chicken soup

"This is comfort food. When my husband's grandmother passed away 25 years ago a neighbor sent this over to my mother-in-laws house, it was very well received as all the other neighbors were sending over cakes, pies and jello salads. We have been making this ever since. Hint: Put this together the night before and finish it off when you get home from work."

  • 1 lb ground beef
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 (10 3/4 ounce) can water (rinse out soup can)
  • 1 (8 ounce) package of kolops noodles, cooked and drained (or any light and fluffy egg noodle)
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1⁄2 teaspoon pepper
  • Topping

  • 2 -3 slices day-old white bread, cut into small cubes
  • 1 tablespoon butter

directions

  • Brown ground beef in skillet.
  • Season with onion powder, salt and pepper.
  • After browning, add cream of chicken soup; mix well.
  • Add one soup can full water and mix well.
  • Simmer on low 25 minutes.
  • Mix in cooked and drained noodles and transfer this to a buttered baking dish.
  • Finish this off with the bread cubes toasted in the 1 tablespoon of butter in a clean skillet.
  • Bake the casserole uncovered in 325° oven for 25 to 30 minutes.

    This was a big hit with my boys. They wanted me to make it again the next night! I did as one reader suggested and used cream of chicken as well as cream of mushroom soups. I also added the onion soup mix. I put corn , mushrooms and garlic powder in it along with a little chili powder for an added zing. Will definitely make this again. Thanks for posting!

    I added frozen mashed onion to the ground beef and fried them. I used a can of evaporated milk instead of water. Added powdered garlic. Added a small can of mushrooms while everything was simmering. Also used non egg noodles...I will add bread crumbs to the top or the dish when baking. I added a tiny bit of celery salt too. When finished the noodles took up some of the flavor so I will make sure that I add a little more spices to the dish before hand. We added peas to the kids meals and they loved it! I will add more then 1/4th cup of water next time since the noodles took up a lot of the juice too. It got a little dry. Oh and the bread crumbs didn’t do anything but dry it out…so I will do the bread topping like you suggested originally or I will do the biscuits.

  4. I make this adding 1 can of cheddar cheese soup to the orignal mixture above. I also cook English peas as a side so that if you like them you can add them as well.

  1. I made this for dinner. My husband was excited when he saw it because he thought it looked like "hamburger helper"! I used what I had on hand with some modifications: bow tie noodles, beef consomme in place of water, cream of mushroom and chicken soup, onion soup mix (per recommendation of reviews), frozen soup mix vegetables, pillsbury grands biscuits on top. For seasoning I used season pepper, chili powder, salt,onions, and garlic. This is a great recipe because you can modify and play with it depending what you have on hand.
