How to make passion fruit ice cream

Passion-Fruit Ice CreamQuentin Bacon

Ingredients

Makes about 2 quarts

1 1/2 cups sugar

3 large eggs

3 cups heavy cream

1 1/4 cups thawed frozen passion-fruit pulp*

  1. Step 1

    Whisk together sugar and eggs. Heat cream in a 2 1/2- to 3-quart heavy saucepan over moderate heat until it just reaches a boil, then add hot cream to egg mixture in a slow stream, whisking. Pour custard into saucepan.

    Step 2

    Cook custard over moderately low heat, stirring constantly, until it registers 170°F on an instant-read or candy thermometer (do not let boil). Pour custard through a fine sieve into a clean bowl and cool completely. Stir in passion-fruit pulp, then chill, covered, until cold.

    Step 3

    Freeze custard in ice cream maker. Transfer to an airtight container and put in freezer to harden.

  • I live in San Diego, CA. Couple years ago I planted a passion fruit vine. The harvest this year is phenomenal. Your passion fruit ice-cream turned out fantastic. The passion fruit flavor is very fruity. (possibly due the fruit being picked and used within the hour). Looking forward to trying the passion fruit ice-cream with the coconut milk recipe.

  • I like the simplicity of this recipe, but made one change. I added a 14 oz can of coconut cream and added enough half and half to make the 3 cups. It still made a wonderfully rich custard. Used fresh passion fruit since its in season right now and it grows locally. To serve, I topped the ice cream with a little chopped dark chocolate. The crunchiness of the seeds added to the experience. It might also be good with a little grated toasted coconut.

  • Very easy recipe and a big hit. Liked the creamy tartness. Cooked this in a clay double boiler of sorts, ran it through my ice cream maker for about 15 mins in addition to what the recipe called for and then froze it in an ice cream freezer and it worked very well. Will definitely make again.

  • The recipe is very simple to make and very good, but I agree with everyone else that it is not fruity enough. To make it fruitier I put in 2 bags of the Goya passion fruit pulp and increased the sugar by 1/2 cup to balance the tartness of the pulp.

  • I love passion fruit, so I expected to love this. It was pretty good, but I wanted a less creamy, more intense fruit flavor. I might try and make passion fruit sorbet instead. For those living in Texas looking for passion fruit puree, I found in the frozen food section of the Fiesta grocery store (I know they have Fiestas in Houston and Dallas)

  • Loved this, but I love passion fruit, so it was almost a given. A few notes: first, I cut the fat a little by using about a 2/1 cream/milk ratio instead of straight cream; second, the Goya brand frozen puree has more slightly more than called for here, so I just used it all and upped the milk and cream a little. Turned out great--I served with the tuiles listed here.
