  • 1 lb smoked sausage, cut into bite size pieces
  • 1 small onion, chopped
  • 3 green onions, chopped
  • 1 -2 clove garlic, minced
  • 1 teaspoon vegetable oil
  • 1⁄2 teaspoon creole seasoning (I use Tony’s Chachere’s Original Creole seasoning)
  • 1 (10 ounce) can rotel diced tomatoes with mild green chilies, undrained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (14 ounce) can chicken broth
  • 1 cup long grain rice, not instant
  • water

directions

  • In a large family skillet with lid, heat oil on medium heat.
  • Add onion, green onion and garlic; sauté until soft.
  • Add sausage and Creole seasoning.
  • Once sausage is slightly brown, add Rotel and black beans.
  • Stir until just combined.
  • Pour chicken broth into measuring cup and add water to measure 2 cups.
  • Add 1-cup rice and broth, water mixture to skillet.
  • Stir until combined.
  • Bring to a boil, cover and reduce heat to a simmer.
  • Cook until rice is cooked through and mixture is thickened slightly.

    I removed casing from Hatch Chili Bison Sausage, used Rotel Tomatoes with Mild Hatch Chili and Tony C's creole seasoning, pinto beans and bone broth from my Thanksgiving turkey carcass and oh baby... SO easy and just a little kick. The only issue is that I didn't stir it while it was simmering and my first bowl had crunchy rice which I don't like. I went back for seconds and that rice was cooked. So definitely give it a stir at some point while its simmering to ensure all the rice gets cooked in the liquid. Otherwise I've got more of the Hatch sausage and will make this again this winter.

    This was a very easy and tasty recipe. The use of one-pot was especially nice. I used spicy sausage which came out delicious!

    This turned out great! I didn’t have any stock so I used chicken bouillon. I added a pinch of cayenne pepper, pinch of salt, some onion and garlic powder and fresh ground black pepper. I didn’t have quite a pound of andouille so I had to add the extra flavor. Thanks!

    This is so good! I added extra Cajun seasoning and a bit more salt and it was perfect for us. We used turkey kielbasa and kasmati rice so I had to add a little extra liquid. This one is definitely going in the regular rotation.

  1. I did not drain and/or rinse the black beans, I used precooked smoked sausage and added towards end with a layer of cheese and simmered until the cheese was melted.

    We substituted a chopped jalapeno for green onions, and three cheese Italian chicken sausage for smoked chicken sausage.

    This recipe was great, very easy and quick to make. I tweaked by using already cooked brown rice, and shrimp instead of sausage. This recipe would be easy to add a lot of variations depending on what I have on hand. Thanks!

    Giving this 5 stars for adaptability since I didn't have all the listed ingredients but was able to use substitutions and still have a very good meal! 1. I forgot the garlic entirely. 2. Used just water instead of chicken broth. 3. Used fire roasted tomatoes instead of Rotel. 4. Did not have green onions.

    very good: perfect way to use up left over grilled kielbasa/sausage. used fresh roma tomatoes in place of the canned and made the rice separately in the rice maker and then added when it was finished. very good. used emeri's cajun spice recipe from this site as well (#22089).
