I love a great crock pot recipe that actually turns out well!  A couple years ago I found a recipe on Pinterest   for chicken and stove top.  Only a few ingredients so I thought I’d give it a try.  I’m glad I did!  Great recipe but I spiced it up a tad and substituted a few things.  Over all it’s just a basic 4 ingredient recipe along with your crock pot.

Ingredients:

Pack of boneless chicken thighs or breasts washed -Tip: ( I spread and cut them in half and I use thighs) Approximately  4 to six  smaller thighs or 3 to 4 large breasts (boneless)  Cutting & choosing   is up to you.  Makes more meat throughout the mixture if you cut them in half.

(1) 6 ounce package of stove top stuffing mix ( I use chicken flavor)

1/2 cup sour cream (I use Daisy light)

1 can of cream of chicken soup ( I use cream of mushroom)

1/2 can milk or water ( I use 1 can of  2% milk as the mixture is real thick, you can use skim or whole milk)

1 small can of mushrooms or you can use fresh (optional)

1/2 sweet onion cut in quarter pieces (optional)

Salt/pepper to taste

Directions:

Spray your crock pot with no stick cooking spray as this tends to stick a little bit.  First layer your chicken on the bottom.  Mix the sour cream, milk or water (your choice)  with the soup of your choice along with the mushrooms and stir.  Pour the mixture over the chicken evenly then add the onions, salt and pepper.  Top with the package of Stove Top Stuffing mix spread out evenly.   For newer crock pots, cook on low for four to five hours.  High makes it too thick very quickly and dries out the chicken.  I also check this along the way and add milk (water if you wish) if mixture gets too dry. 

I serve this with mashed potatoes and cranberry sauce.  It’s a Thanksgiving ‘fix’ anytime of the year.  I also love using the crock pot when pretty weather is upon us.  Gives us more time for family and outdoor adventures & projects.  🙂

 This is my mixture about half way thru as I added a bit more milk & stirred a bit.  No need to stir until mid way through the cooking process.  It will all thicken up in the last couple of hours.  Stir as needed.

Ingredients

    4 chicken breast halves
    1 12 oz can of low-fat cream of mushroom soup
    1/2 cup fat-free sour cream
    1 1/2 cups water
    1 packet of onion soup mix


Directions

Place thawed chicken into crock pot or slow cooker. In a medium bowl, mix all the other ingredients together. Pour mixture of chicken and cover. Cook at low setting 6-8 hours or higher setting for 4-6 hours.

Notes: This has got to be one of the easiest meals to put together and has become a family favorite. It's very creamy and goes well with wild rice or potatoes. The recipe doubles nicely for larger servings.

    this was wonderful!!! I added some no yolk egg noodles about 30 minutes before eating, the noodles soaked up the extra sauce I also added frozen peas...yummy!!!! - 1/30/08

    This was really good. I think next time I'll add some sliced fresh mushrooms and maybe only put in about 1/2 the onion soup mix. - 2/6/10

    I love this recipe. You could also substitute cream of chicken instead of the mushroom soup. Also some times I put a bit of low fat sour cream just before serving especially if I am using noodles. Yummy! - 1/22/09
