This meal can be done in 35 minutes. Which is pretty much always my goal with dinners. Unless we are having a meal that is a fun family experience: involving the kids in measuring, mixing, baking, and cooking; then speed and ease are always on my mind.

I absolutely adore cooking, but in the evening I’m tired, I’m hungry, and somehow the kids still always have enough energy left for another excursion. 

So putting together a fresh homecooked meal in about 30 minutes is always my goal. When you have pre-marinated pork on hard with real fresh ingredients, a 30-minute dinner goal is completely achievable every time!

Especially when you take into account that these pork loins are so versatile there are even faster ways to prepare than oven roasting. By slicing or dicing your loin before cooking, you can easily cut the cook time in half for a really quick but healthy dinner if you needed to!

Ingredients:

  • 1 pound brussel sprouts
  • 2 large Honeycrisp apples
  • 2 cups of quinoa
  • 3 tablespoons avocado oil
  • 1/4 teaspoon cinnamon
  • 1 packet of stevia sweetener

DIRECTIONS:

1. Preheat the oven to 400 degrees. Place the pork loin bacon side up (that’s right, it’s ACTUALLY  crusted in real bacon pieces and it’s perfectly amazing) in a pyrex baking dish. Once preheated insert the dish into the oven for about 30 minutes. No need to cover or foil wrap, this quick and easy pork loin will turn out perfect. 

2. Bring 8 cups of water to a rapid boil in a pot on the stove. Once boiling add in quinoa, stirring occasionally. Cook 12-15 minutes and then strain off the excess liquid.

3. Ready for the hardest part? (Gotcha, it’s not hard at all!) Halve the brussel sprouts and dice the Honeycrisp apples. You can use any type of apple you like really, but after moving to Washington for 3 years, we became completely spoiled by the amazing Honeycrisp apples there and are still hooked! 5. When the pork reaches an internal temperature of 150 degrees, pull the pork loin out of the oven and allow to rest for 3 minutes before slicing it up so it can fully cook as it cools.
